Hi! I'm Christy Queitsch of Christy's Corner. I am excited to announce the addition of this area to our website. Christy's Corner will be continually updated to post recipes, ideas, and helpful hints to make your journey into weight loss and wellness successful. Here are a couple of recipes many of our patients have enjoyed. These recipes are in line with the weight loss portion of our nutritional plan. Just remember to count the proteins, fruits, and veggies toward your daily servings! Be sure to check your New Patient Book for serving sizes and allotment. Enjoy!
Onion Soup (serves 4) 4 small onions 4 cups fat free, low sodium beef broth 2 tbsp olive oil 3 cups low fat mozzarella or provolone cheese Preheat oven to 400 degrees. Cut onions into thick small slices. Heat olive oil in deep skillet on med/high. Add onions. Brown onions in pan until soft. Stir in 4 cups of beef broth into pan with onions and turn off heat. Pour mixture into 4 oven safe bowls or dishes. Top with cheese. Bake until cheese is melted, approximately 10 minutes.
Cottage Cheese Treat (1 serving) 1/4 cup cottage cheese or low fat ricotta 1 tsp. Splenda 1/2 tsp. Cinnamon, nutmeg or cocoa powder Mix all ingredients for a quick snack. If you do not like the texture of cottage cheese, you may blend it in the blender and it will turn the consistency of yogurt.
